‎~Super Easy Ras Malai~

 
Ingredients:

Egg - 1
Baking powder - 1 teaspoon
Milk powder - 1 cup
Maida - 1 teaspoon
Fresh milk - 4 cups or 1 litter
Sugar - according to your taste, I add usually 3 hipped tablespoon
Crashed Cardamom pods - 1
Vanilla essence - half teaspoon
Pistachios & Almonds (chopped) - To garnish

Methods:

1. In a deep bottomed vessel add sugar with milk and crashed cardamom , keep the milk on law flame and let it be boiled.

2. In a mixing bowl mix all dry ingredients together...maida,milk powder,and baking powder.

3. Now, add in the egg(which is beaten lightly), vanilla essence and knead into a smooth dough. Don't knead too much, 1st it will be sticking to your hand but if you keep it for 3/4 minutes , the dough won't stick to your hand then.

4. Ball the dough to small shapes(as it will rise when cooked in milk). Now add immediately these balls into the boiled milk & let them be cooked. The balls will tend to swell up , Lower the heat to simmer.Cook the milk with the balls for another 8- 10 minutes. Shake the vessel lightly in between so you won't burn the dish.

5. After 10 minutes check a ball, If its cooked from inside, turn off the heat. If not, cook for another few minutes. Now, turn off the heat & let it cool.

Best served chilled & garnish with some pistachios and almonds before serving.

Beguni With Til / Brinjal With Sesame seed


Ingredients
100 g ( 2-3 ) long slender brinjals, thinly siliced, leaving the stem attached
½ cup besan ( gram flour )
Turmeric powder- 1/4 teaspoon
2 tablespoon til ( sesame ) seeds
Salt to taste
A pinch of red chilly powder
Oil

Method:
Mix besan with water to create a batter of fritter- coating consistency, adding turmeric powder and salt to taste. Dip brinjals in batter to coat, sprinkle with til seeds and a dash of chilly power each side. Deep –fry in very hot oil till crisp and drain on kitchen paper / towel. Serve hot.

Delicious Haleem Iftar Recipe


Ingredients

2lb Lamb or chicken(boneless) cut in cubes
11/2 cup Haleem Wheat or 2 cups of cracked wheat
1 tablespoon Ground spices like cloves, cinnamon ,coriander seeds and cumin seeds(Garam Masala)
1 cup Chopped cilantro and mint
1 tablespoon ginger garlic paste
1/2 cup Crispy fried onions for garnish
1/2 lime juice
2 green chillies
1 teaspoon red chilly powder
1/2 tsp turmeric
1 teaspoon salt
2 tablespoon Extra Virgin Olive Oil

Method

1) Soak Haleem wheat for 24hrs. Change water every 6 hours. For cracked wheat soak overnight.

2) The following day, marinate the cleaned meat (trim any white fat) with grated ginger garlic, salt, red chilli powder, garam masala and turmeric.

3) Heat a tablespoon of olive oil in a pressure cooker and add the marinated meat. Roast for couple of minutes and add the soaked wheat along with 2 cups of water. Cook 10 minutes at medium high flame. Another 40 minutes at medium low. Turn the heat off. Wait another 10 minutes before opening the lid. Let cool slightly.

4) Then coarsely grind it using an immersion blender or food processor.

5) Then Pour it in to a heavy bottom skillet and add the chopped greens ,lime juice and some more water.simmer until the blisters start. Garnish with crispy fried onions, roasted cashews or almonds and lemon wedges.
