Guys,
I have recently created this blog and added dessert recipes especially for Eid (All my recipes are tried & tested). I hope you will enjoy my simple collection of recipes :-)

Tiramisu


Ingredients:
4 - Eggs
¾ cup - Caster sugar
250 gm - Philadelphia cream cheese block
100 ml - Thicken cream
1 cup - Coffee (without milk)
1 large packet - Sponge fingers( savioirdi or unibic)
Cocoa powder for dusting
Grated chocolate for garnishing (optional)

Method:

1. Separate the egg whites & yolks & put them in 2 different bowls.
2. Beat egg yolks & sugar in a large bowl with electric beaters until they are pale & thick.
3. Add the cream cheese into the mixture & continue beating until it is mixed well & there are no lumps in the mixture.
4. Add thicken cream into the above mixture & mix gently until it is combined well & set aside…
5. Prepare coffee & let it cool.
6. Beat egg whites in a separate medium bowl with electric beater until soft peaks are formed.
7. Using a large metal spoon gently fold in the egg whites in to the cheese mixture.
8. Dip enough biscuits in to the coffee to cover the base of a 19cm square dish, dust the biscuits lightly with cocoa powder (optional)
9. Cover the biscuits with 1/3 of the cheese mixture, repeat the layers ending with the cheese mixture.
10. Cover with cling wrap ( plastic wrap) & put it in the freezer for at least 1-2 hours or chill it in the fridge for 5-6 hours until the flavors are well set.
 11. Dust generously with cocoa powder & grated chocolate & serve..
 
Tips: Tiramisu is best when made a day earlier.

Banana Chocolate Brownies



Ingredients:
3/4 cup - All purpose flour ( Plain flour/Maida)
1/4 cup - Cocoa powder
1/2 tsp - Baking powder
1/4 tsp - Salt
3 oz - Bittersweet (or semisweet) chocolate, chopped
4 tbsp - Butter
1/3 cup - Sugar
2 - Eggs
2 ripe - Bananas
1 tsp - Vanilla essence (optional)
Method:
1. Melt cocoa, butter and chocolate in bowl and set aside. 
2. In a separate bowl mash 2 ripe bananas; add eggs and vanilla. 
3. In a largel bowl combine flour, baking powder and sugar. Add banana mixture to flour. While there are still a few floury streaks, add chocolate mixture. Mix again until everything is just combined.
4. Place contents into a parchment lined 8x8 pan. Bake at 350 for 30 to 35 mins.

Quick and easy 5 min Pineapple Souffle.



Ingredients:
 750gm - Plain yogurt
2 can - Condensed milk
2 - Pineapple jelly
1 box of whiped topping  (8 oz)
1 can of crushed pineapple (strain and keep the pineapple, u can discard the juice)
 Method:
 Mix these 5 ingredients with the beater for 1 minute or until well mixed.

Trust me guys... no one would believe it took less than 5 min. It taste like pineapple pishawari icecream.

Simple & Yummy Cheese Pakora


Ingredients:
1Cup - Chedder Cheese (Grated)
1 Big - Onion (Chopped)
3/4 - Green Chili (Chopped)
Salt to taste

Pinch of testing Salt
Pinch of Black pepper
3Table Spoon - Plain flour
Pinch of Bakin Powder
Method:
1. Mix all the above ingredients together and add sufficient water to make a thick batter.
2. Heat oil in shallow fry pan.
3. Drop spoonfuls of batter into the oil ( it is better to use spoon then hand).
4. Fry the pakoras until golden in color. 
5. When cooked, drain the excess oil on a sheet of brown paper or paper towels.

Now serve with Tomato Sauce and Salad

Yummy Cheesy Potato Bake


Ingredients:

6 to 7 large - Potatoes
1 cup - Ricotta Cheese
2 cups - Shredded Mozzarella
½ cup - grated Parmesan Cheese
5 to 6 slices - Salami ( or you can use thin slice of chicken breast or beef)
3 - Eggs
1 cup - Milk
Black pepper to taste
1 tsp - Garlic powder
¼ cup - Italian Parsley, minced
Salt to taste
Bread crumbs

Method:
1.Peel and slice the potatoes into thin rounds. Season with the garlic, black pepper and salt. 
2. In a large bowl mix together the Ricotta, parsley,black pepper, ¼ cup of the parmesan and one egg.
3.In another bowl beat the remaining 2 eggs with the milk and a sprinkle of pepper, set aside.
4. Brush a baking dish with butter and layer the slices of potato to cover the bottom of the dish, spread the Ricotta mixture over the potatoes, arrange the slices of the salami or any other meat and sprinkle  a layer with Mozzarella, then another layer of potatoes. 
5. Pour over it the milk and egg mixture, sprinkle with remaining Mozzarella and Parmesan cheese, then sprinkle some bread crumbs very lightly. 
6. Cover with a piece of Aluminum foil and bake in a 350 degree oven, until potatoes are cooked and turn brown/golden colour.
7. Take out of oven, remove foil and let it rest for 15 minutes before cutting into it.

Gulab Jam


Ingredients:
  • 1 cup - Skim milk milk powder
  • 1/4 cup - All Purpose flour (plain flour, maida)
  • 3 tablespoons - Unsalted butter
  • 1/4 cup -  Milk
  • Pinch of Baking soda
  • 1 3/4 cup - Sugar
  • 1 1/2 cup Water
  • 1 or two Cardamom
  • Oil for deep-frying
Method:
  1. In a bowl, mix milk powder, flour and baking soda.
  2. Add the butter and mix well.
  3. Now add milk to make soft dough. The dough will be sticky.
  4. Let the dough stand for a few minutes. (Milk powder will absorb the extra milk. If the dough is dry, add more milk, as the dough should be soft).
  5. Knead the dough. Grease your hands with butter before working with the dough.
  6. Divide the dough into about 20 equal portions and roll them into round balls.
  7. Heat the oil in a frying pan on medium heat. The frying pan should have at least 1 ½ inch of oil. (To test if the oil is the right temperature, place a small piece of dough into the oil; it should take a minute to rise. If dough rises faster, oil is too hot; if dough just sits without rising, oil is not hot enough).
  8. Place the gulab Jam in the frying pan.  (remember gulab jam will expand in double the volume, so give them enough space).
  9. It should take about 7 minutes to fry the gulab jam. While frying keep rolling the gulab jam around so they are evenly browned. Fry until the gulab jam become dark brown.
  10. Let the gulab jam cool off for a few minutes before placing in the hot syrup.
  11. The gulab jam should sit in the hot syrup for at least 20 minutes prior to serving.
Tips:
  1. If the gulab jam are fried on high heat, they will become hard inside and not fully cooked.
  2. Too much baking soda will cause the gulab jam to get too soft or they will break apart when frying.
  3. Don’t place the gulab jam in the syrup immediately after frying. This will cause the gulab jam to lose their shape and become chewy.


Sunday

Seekh Kabab


Ingredient:
1/2kg -  Beef/Lamb mince
1-  medium Onion,
4 cloves  - Garlic
2 inches - Ginger
3 /4 - Green chillies
1/2 cup - Fresh chopped coriander
1/2 cup - Fresh chopped mint leaves
1/2 cup - Breadcrumb
Juice of 2 limes
1/2 tsp-  Garam Masala
Salt to taste
Red pepper / onions / coriander for garnish
Method:
1. Place the mince lamb/beef  in a bowl and add breadcrumb
2. Place the onions, garlic, ginger, chillies, coriander and mint leaves; lime juice in the food processor;
3. Grind and add to the the mince with the salt and garam masala. Mix well.
4. Marinade for about an hour.
5. Divide the mixture into 20 lumps
6. Wet hands and shape into long sausages on the skewers; should be 4-5 inches long, place in bbq or grill
7. Grill about 4 minutes on each side.
 8. Garnish with red pepper/onion/coriander


Busy Day Meatloaf



Ingredients:
1/2 kg - Beef mince
1/2 tsp - Salt
2/3 cup -  Bread Crumb
1 - Egg (beaten)
3 tbsp - Onion (minced)
1/4 tsp -  Nutmeg
1/2 tbsp -  Mint or coriander ( finely chopped)
1/4 tsp -  Pepper
2 tbsp - Sugar ( brown or white)
1/3 cup - Tomato ketchup
1/2 tsp - Ginger
1/2 tsp - Garlic
2tbsp - Soy sauce
pinch of ground mustard
Salt - as needed

Method:
1. Crumble beef into large bowl. Add salt, bread crumb and milk. Let stand for few minutes until crumbs are soft. Then blend together. Add  egg ,onion, coriander or mint, nutmeg and pepper and mix well.
2. Place foil on baking tray, brush with 1/2 teaspoon of butter and pour the mixtures into the tray.
3. Bake for 30 minutes then take out and brush on with the topping as mentioned in no.4 , then  bake for another 15 minutes. Take out of oven and cool for few  minutes, sprinkle with coriander and serve.

Topping:
1. Mix sugar, ketchup, ginger, garlic ,salt, soy sauce and mustard and brush on top of meatloaf

Delicious Fruit Salad


Ingredients: 
1 - Apple chopped
4-5 - Banana or according to your desire
½ cup - Pineapple chopped
2 different color of fruit jelly powder
750 gm - Milk
1 cup -  Fresh cream
2 tbspn - Corn flour
Sugar to taste

Method:
1. Cut apple & banana into the shape you like
2.  In a different bowl take pinch of jelly powder, milk, fresh cream and corn flour, pinch sugar and mix them thoroughly.
3. Pour the mixture over fruit and slightly stir with spoon. 
4. You might like to refrigerate for few minutes before serving.

Kashmiri Kabab

Ingredients:
1 kg  - Minced beef/mutton
2 - Onions, quartered
4 - Green chillies, cut in big pieces
1 1/2 -  inch piece of ginger
1-  Raw egg
1 1/2 -  tsp red chilli powder
1 tbsp - Cumin powder, roasted
Salt and pepper to taste

Method:

1. Clean and wash the keema.
2. Mix all the ingredients except raw egg.
3. Add the raw egg and blend it well. Shape this mixture into oblong pieces like sheekh kabab.
4. Boil 2 glasses of water in a shallow pan. While the water is boiling, gently slide the kababs in it. Let the kababs simmer till the entire water evaporates.
5. Deep fry kababs in a shallow pan till light brown.
6. Serve hot with lemon wedges and onion slices.

Thursday

Coconut Barfi

 

Ingredients: 
Condensed milk - 400gm
Coconut - 100gm
Milk - 1/2 cup
Red color
Ghee - 1tsp
Method:
1. Heat ghee in non-stick fry-pan and add condensed milk, coconut powder and milk powder on slow  heat and stir for 5 minutes.
2. Add on milk slowly and stir till the mixture leaves the side of pan.
3. Divide the mixture into two portion.
4. Spread one portion evenly in greased plate
5. To the remaining portion add the red color and mix well.
6. Spread it evenly over the white portion.
7. Allow it to cool for 30 minutes. Then cut it into the shape you want. (square or round)
