Badam halwa (Mixed Nut)





Ingredients: 
Almonds/Cashew Nut/ Peanut - 3 cup ( Or your choice of nuts)
Sugar - 2 cup
Milk - 1 cup
Cardamom - 1 or 2
Ghee - 3 Tbsp
Raisins & Almond Flakes for garnishing ( As desired)
Rose water for fragrance (As needed)
Methods:
1. Blend all nuts with milk ( mixture will be coarse, not smooth).
2. In a hot pan heat ghee for few second and put cardamom until it gives fragrance but do not burn the cardamom!
3. Add blended nut mix to ghee and stir for 3 -4 minutes.
4. Then add sugar to the pan and on medium heat cook for 20-30 minutes.
5. Remember to stir continously untill the mixture completely comes off the pan.
6. Brush serving dish with pinch of ghee.
7. Pour the halwa into the pan. If you wish to make it barfi shap, then you need to let the halwa cool and make shape you like.
8. Garnish halwa with raisins and almond flakes and or sprinkle with rose water.


Scrambled Cauliflower



Ingredients:
Cauliflower grated - 1 cup
Cabbage grated - 1 cup
Onion - 1/2 cup
Green Chilli - 4 chopped
Shreded Coconut 1/2 cup (Optional)
Egg 2 large
Mustard seeds 1 pinch
Oil 5 tbs
Salt to taste


Method:

1. Heat the oil.

2. Add mustard seeds and fry for few seconds
3. Add cauliflower and stir for 2 minutes.
4. Add green chilli and stir for 1 minute
5. Add cabbage,egg and salt and  stir for 5-10 minutes in low heat until the vegetables are tender and eggs are well scrambles
6. Add coconut and fry another 5 mins (If you want to)

Easy Carrot & Banana Cake

Ingredients:

1 ¼ cups vegetable oil
4 large eggs
1 ½ tsp baking soda
3 cup sifted flour
1 cup roughly chopped nuts
2 cups castor sugar
2 tsp baking powder
2 cups grated carrots
2 cups mashed bananas

Method:

Mix all ingredients together, blend well
Pour into two well greased loaf pans.
Bake in preheated (180°C/ 350°F) moderate oven until centre springs back.
This cake freezes well.
